When you enter a restaurant, water and small plates are brought out first and side dishes are already laid out — you were surprised, weren't you? It's a sign of hospitality, and side dishes prepared in advance to be eaten with rice. ## Why are side dishes served first? In Korea there's a strong culture of sharing food together. Side dishes like kimchi and jangajji keep well, so they're often made ahead of time at home or in restaurants. That's why they're put out first so guests can eat right away when they arrive. In restaurants with lots of similar menu items, they often prepare things in advance to serve customers quickly. ## Tips you can use right away 1) If you want extra side dishes, say "Could you give me more side dishes?" Or try saying "Please give me a little more kimchi." Most of the time they give it for free. However, at small street stalls or high-end restaurants it may cost extra, so it's safer to ask up front, "Is this charged?" 2) If you have allergies or are vegetarian, please let us know in advance. Anchovies or fish sauce may be used. 3) Leftover side dishes may be packed to go, depending on the restaurant. Ask, "Could you pack the leftovers?" Please enjoy your meal — don't feel pressured.
